When mixing 'in the box' with a DAW, then it is normal simply to bounce the mix to a stereo file. In most cases this will be absolutely fine and totally the right thing to do. But it isn't the only possibility...
You might for instance have a setup that includes analog outboard, and perhaps even analog mixing or summing. Your 24-bit, 44.1 kHz recording has a lot of analog loveliness that you would like to capture in as pristine a form as possible. Therefore it would make perfect sense to mix to a separate system, which could be another DAW or a standalone recorder, running at 192 kHz sampling rate. Think of it that you are 'future proofing' your mix against any further developments in consumer listening technology. You might even win the approval of vinyl enthusiasts.
